Big Heart Artichoke and Parmesan Soup

Ingredients

  1. 1/2 lemon
  2. 4 Big Heart or globe artichokes (1 pound each)
  3. 2 tablespoons extra-virgin olive oil
  4. 3/4 pound Yukon Gold potatoes, peeled and cut into 1/2-inch pieces
  5. 4 large shallots, halved
  6. 3 large garlic cloves, halved
  7. Salt
  8. 1 cup dry white wine
  9. 4 cups chicken stock or broth
  10. One 4-ounce Parmesan rind, plus 1/2 cup of shavings, for garnish
  11. 12 thyme sprigs and 1 tablespoon whole black peppercorns, tied in cheesecloth
  12. 1/2 cup heavy cream
  13. 1 cup pure olive oil
