Stuffed Yellow Peppers with Spicy Swiss Chard and Scallion Pilaf

Ingredients

  1. 1 1/2 cups short-grain (sushi) rice, rinsed and drained
  2. 3 cups water
  3. 3/4 pound Swiss chard, ribs removed and reserved for another use
  4. 1/4 cup extra-virgin olive oil
  5. 6 medium scallions, thinly sliced
  6. 1 garlic clove, minced
  7. 3/4 teaspoon turmeric
  8. 3/4 teaspoon ground cumin
  9. 3/4 teaspoon ground ginger
  10. 1/4 teaspoon cinnamon
  11. 1/4 teaspoon cayenne pepper
  12. 1 medium tomato, diced
  13. 2 tablespoons currants
  14. 1 tablespoon fresh lemon juice
  15. Salt and freshly ground pepper
  16. 4 yellow bell peppers (1/2 pound each)
  17. 1 cup vegetable broth or water
