Artichokes Simmered with Green Beans and Bacon

Ingredients

  1. 1 tablespoon extra-virgin olive oil, plus more for drizzling
  2. 4 strips of bacon, sliced crosswise 1/2 inch thick
  3. 1 medium onion, halved and thinly sliced
  4. 1 medium carrot, sliced 1/4 inch thick
  5. 2 garlic cloves, very thinly sliced
  6. 2 cups water
  7. 1 cup dry white wine
  8. Juice of 1 lemon
  9. 1 teaspoon thyme leaves
  10. 1 bay leaf
  11. 1/4 pound thin green beans
  12. Two 9-ounce packages frozen quartered artichoke hearts, thawed and drained
  13. Kosher salt and freshly ground pepper
  14. 1 tablespoon coarsely chopped flat-leaf parsley
