Ingredients

  1. 1 large egg
  2. 3 anchovy fillets, rinsed
  3. 2 tablespoons fresh lemon juice
  4. 2 garlic cloves, 1 minced
  5. 1 tablespoon Dijon mustard
  6. 1/2 cup plus 1 tablespoon extra-virgin olive oil
  7. 10 ounces Parmesan cheese, 3 ounces finely grated and 7 ounces coarsely shredded
  8. Salt and freshly ground pepper
  9. 1/2 baguette, cut into 1/2-inch cubes (4 cups)
  10. 1 teaspoon paprika
  11. 1/2 pound baby spinach (8 cups)
