  1. Four 3/4-inch-thick slices of firm-textured white bread, torn into 1-inch pieces
  2. 3 tablespoons unsalted butter, melted
  3. 2 tablespoons finely chopped parsley
  4. Salt
  5. 1 large sweet onion (10 ounces), sliced crosswise
  6. 1/2 inch thick
  7. Freshly ground pepper
  8. Pure olive oil, for drizzling
  9. 2/3 cup extra-virgin olive oil
  10. 1/3 cup red wine vinegar
  11. 2 tablespoons minced shallots
  12. 1 tablespoon minced fresh ginger
  13. 1 garlic clove, minced
  14. 1 1/2 pounds mesclun (24 loosely packed cups)
