Ingredients
- Four 3/4-inch-thick slices of firm-textured white bread, torn into 1-inch pieces
- 3 tablespoons unsalted butter, melted
- 2 tablespoons finely chopped parsley
- Salt
- 1 large sweet onion (10 ounces), sliced crosswise
- 1/2 inch thick
- Freshly ground pepper
- Pure olive oil, for drizzling
- 2/3 cup extra-virgin olive oil
- 1/3 cup red wine vinegar
- 2 tablespoons minced shallots
- 1 tablespoon minced fresh ginger
- 1 garlic clove, minced
- 1 1/2 pounds mesclun (24 loosely packed cups)
