Ingredients

  1. 5 ears of corn
  2. 1/2 medium Vidalia or Walla Walla onion, thickly sliced crosswise
  3. 1 tablespoon extra-virgin olive oil
  4. 1/4 cup plus 2 tablespoons sour cream
  5. 2 tablespoons fresh lime juice
  6. 2 chipotle chiles in adobo sauce, seeded and finely chopped
  7. 1 scallion, thinly sliced
  8. Salt and freshly ground pepper
