  6. 1 bay leaf
  7. Grated zest of 1/2 orange
  8. 1/4 teaspoon turmeric
  9. 3 plum tomatoes, chopped
  10. 1 cup dry white wine
  11. 8 1/2-inch slices baguette
  12. 3 pounds mussels, scrubbed and debearded
  13. 3 cups water
  14. 1 teaspoon salt
  15. 1/4 teaspoon fresh-ground black pepper
  16. 3/4 cup heavy cream
  17. 1/4 pound prosciutto or other flavorful ham, chopped
