Mussel Chowder with Bacon and Shiitake Mushrooms

Ingredients

  1. 6 ounces thinly sliced bacon, cut crosswise into thin strips
  2. 1 cup chopped onion
  3. 1 celery rib, chopped
  4. 2 medium Yukon Gold potatoes, cut into 1/2-inch dice
  5. 2 tablespoons unsalted butter
  6. 1/2 pound shiitake mushrooms, stemmed and caps thinly sliced
  7. 1 tablespoon all-purpose flour
  8. 2 cups chicken stock or low-sodium broth
  9. 1 cup dry white wine
  10. 1 cup clam juice
  11. 1 cup heavy cream
  12. 1 tablespoon vegetable oil
  13. 2 pounds mussels, scrubbed
  14. 2 tablespoons chopped flat-leaf parsley
  15. 1/2 teaspoon hot sauce
  16. Salt and freshly ground pepper
