Soft-Shell Crabs with Lemon Aioli and Sweet Onion

Ingredients

  1. 3 tablespoons red wine vinegar
  2. 1 small shallot, minced
  3. 1 1/4 cups extra-virgin olive oil
  4. 1 small Vidalia or other sweet onion, cut into thin rings
  5. Salt and freshly ground pepper
  6. 1/2 cup mayonnaise
  7. 1/2 teaspoon finely grated lemon zest
  8. 1 1/2 tablespoons fresh lemon juice
  9. 1 1/2 cups rice flour (see Note)
