- 8 Frenched lamb shanks (2kg), 1/4 cup plain flour, 2 Tblspn olive oil, 2 onions, thickly sliced, 4 cloves garlic, thinly sliced, 1/2 cup white wine, 1 1/2 cups chicken stock, 1 Tblspn finely grated lemon rind, 340g jar marinated artichoke hearts, drained, 3/4 cup pitted kalamata olives, 1 Tblspn finely chopped fresh oregano, salt and pepper, to taste, steamed rice and lemon halves, to serve, extra fresh oregano, to garnish with broad-beans on the side.
