  3. 1 tablespoon extra-virgin olive oil
  4. 1 small onion, minced
  5. 1 jalapeohalved, seeded and thinly sliced
  6. 1 small garlic clove, minced
  7. 2 Hass avocados (10 ounces each)peeled, pitted and cut into 1/2-inch dice
  8. Salt and freshly ground pepper
  9. 2 tablespoons vegetable oil
  10. 2 pounds sea scallops
  11. 1/4 cup water
  12. 4 plum tomatoes, cut into 1/2-inch dice
  13. 1 tablespoon balsamic vinegar
