  3. 1 1/3 pounds hot or mild Italian sausage
  4. 1 onion, chopped
  5. 2 cloves garlic, chopped
  6. 1/4 cup dry white wine
  7. 1 1/2 cups canned crushed tomatoes in thick puree (from a 14-ounce can)
  8. 1 1/2 cups canned low-sodium chicken broth or homemade stock
  9. 1/2 teaspoon dried thyme
  10. 2 1/2 teaspoons salt
  11. 1/4 cup chopped flat-leaf parsley
  12. 1/8 teaspoon fresh-ground black pepper
  13. 4 1/2 cups water
  14. 1 1/3 cups coarse or medium cornmeal
