Salade Niçoise

Ingredients

  1. 1/2 pound small red potatoes (about 4), or 1 large potato, quartered
  2. 1/4 pound green beans, halved
  3. 2 tablespoons red- or white-wine vinegar
  4. 1 tablespoon Dijon mustard
  5. 1/2 teaspoon salt
  6. 1/2 teaspoon fresh-ground black pepper
  7. 1/2 cup olive oil
  8. 1 head romaine lettuce (about 1 1/4 pounds), torn into bite-size pieces (about 3 quarts)
  9. 4 hard-cooked eggs, peeled and quartered
  10. 1 2-ounce tin anchovy fillets, drained
  11. 2 tablespoons drained capers
  12. 1 6-ounce can tuna, drained
  13. 1/4 cup drained diced pimientos (from a 4-ounce jar)
  14. 1/4 cup pitted and chopped black olives, such as Niçoise or Kalamata
