Ingredients

  1. 6 tablespoons unsalted butter
  2. 2 medium white onions, finely chopped
  3. 2/3 cup sugar
  4. 3/4 cup plus 1/3 cup dry red wine
  5. 3/4 cup raspberry vinegar
  6. Salt
  7. Eight 4-ounce pork loin medallions
  8. Freshly ground pepper
  9. 1 teaspoon minced rosemary
  10. 8 very thin slices of pancetta (2 ounces)
  11. 2 tablespoons pure olive oil
  12. 8 garlic cloves
  13. 1/4 cup balsamic vinegar
  14. 1 1/2 cups beef stock or canned low-sodium broth
