Pork Colombo

Ingredients

  1. 3 pounds boneless pork shoulder, cut into 1-inch pieces
  2. 2 tablespoons fresh lime juice
  3. Sea salt and freshly ground pepper
  4. 1/4 cup vegetable oil
  5. 2 onions, finely chopped
  6. 2 large garlic cloves, minced
  7. One 1-by-2-inch piece fresh ginger, peeled and minced
  8. 1 tablespoon curry powder
  9. 1 teaspoon dark brown sugar
  10. 2 tablespoons finely chopped flat-leaf parsley
  11. 1 tablespoon snipped chives
  12. 1 teaspoon thyme leaves
  13. 1/2 habanero chile, seeded and minced
  14. 1 1/2 cups water
  15. 1 1/2 pounds large Yukon gold potatoes, peeled and cut into 1-inch pieces
  16. 1 1/2 pounds carrots, cut into 1-inch lengths
  17. White rice, for serving
