Pork Chop, Corn and Mascarpone Macaroni and Cheese

Ingredients

PORK CHOPS

  1. 10 cups water
  2. 1/2 cup kosher salt
  3. 1/3 cup sugar
  4. 10 thyme sprigs
  5. 3 rosemary sprigs
  6. 1 head garlic, halved crosswise
  7. 1 tablespoon black peppercorns
  8. 1 teaspoon crushed red pepper
  9. 2 oranges, halved crosswise
  10. Four 12-ounce center-cut pork chops, about 1 1/2-inches thick

MACARONI AND CHEESE

  1. 2 tablespoons unsalted butter
  2. 3 tablespoons all-purpose flour
  3. 2 1/4 cups milk
  4. 1/2 cup freshly grated extra-sharp white Cheddar cheese
  5. 1/4 cup mascarpone
  6. 1/4 cup freshly grated Parmesan
  7. Salt and freshly ground pepper
  8. Freshly grated nutmeg
  9. 1/2 pound penne

CORN

  1. 2 tablespoons unsalted butter
  2. 8 ears white corn, kernels removed
  3. 1/2 cup chicken stock
  4. Salt and freshly ground pepper
  5. White-truffle oil
