Ingredients

  1. 2 tablespoons unsalted butter
  2. 4 teaspoons dark brown sugar
  3. 3 Golden Delicious apples--peeled, halved, cored and cut into eighths
  4. 1 tablespoon canola oil
  5. Two 1 1/4- to 1 1/2-pound pork tenderloins, each cut into 6 medallions
  6. Salt and freshly ground pepper
  7. 1 cup Late Harvest Riesling
  8. 2 1/2 cups chicken stock or canned low-sodium broth
