Ingredients

  1. 1 cup regular or low-sodium soy sauce
  2. 1/2 cup rice vinegar
  3. 3 garlic cloves, thinly sliced
  4. 2 shallots, thinly sliced
  5. 1 tablespoon honey
  6. 1/2 tablespoon black peppercorns
  7. 1/4 cup fresh lime juice
  8. 6 tablespoons unsalted butter
  9. Freshly ground pepper
  10. 1 1/2 pounds mixed mushrooms, such as creminis, oysters, and stemmed shiitakes, cut into 1/2-inch dice
  11. 1 tablespoon minced fresh ginger
  12. 2 tablespoons finely chopped chives
  13. Salt
  14. Four 1/2-inch-thick boneless sirloin steaks (about 6 ounces each)
  15. 2 tablespoons vegetable oil
