Robiola Cheesecake with Shortbread Crust

Ingredients

CRUST

  1. 6 tablespoons unsalted butter
  2. 3 tablespoons sugar
  3. 1/2 teaspoon pure vanilla extract
  4. 1/2 cup all-purpose flour
  5. 1/4 cup rice flour
  6. Pinch of salt
  7. 1/4 cup plus 2 tablespoons coarsely chopped dried fruit, such as cherries, apricots, figs and dates

FILLING

  1. 6 ounces fresh Robiola cheese (see Note), without the rind, at room temperature
  2. 6 ounces cream cheese, at room temperature
  3. 1/2 cup sugar
  4. 1/2 vanilla bean, split and seeds scraped
  5. 2 large eggs
  6. 2 tablespoons sour cream
  7. 3 tablespoons apricot nectar
  8. 2 tablespoons sherry
  9. 1/2 teaspoon cornstarch
