Ingredients

  1. 1 1/2 sticks (6 ounces) unsalted butter, cut into 1/2-inch dice and chilled
  2. 6 tablespoons sugar
  3. 1/4 teaspoon salt
  4. 1 1/2 cups plus 2 tablespoons all-purpose flour

TOPPING

  1. 1/2 cup heavy cream
  2. Finely grated zest of 1 orange
  3. 1 cup plus 3 tablespoons sugar
  4. 1 tablespoon light corn syrup
  5. 1/3 cup water
  6. 1/2 cup chestnut honey
  7. 1 stick (4 ounces) unsalted butter
  8. 3 cups sliced blanched almonds ( 3/4 pound)
  9. 2/3 cup finely diced candied orange rind ( 1/4 pound)
  10. 3/4 pound bittersweet chocolate, coarsely chopped
