Ingredients

  1. 3/4cup chicken stock or low-sodium broth
  2. 2tablespoons Chinese black bean sauce
  3. 1tablespoon dry sherry
  4. 1tablespoon sugar
  5. 1teaspoon Chinese chile-garlic sauce
  6. 2teaspoons cornstarch
  7. 1/4cup vegetable oil
  8. 1 1/2pounds skinless, boneless chicken thighs, cut into 1/2-inch strips, or skinless, boneless breasts, cut into 1 1/2-inch chunks
  9. Salt and freshly ground pepper
  10. 2tablespoons minced fresh ginger
  11. 1pound bok choy, cut into 3/4-inch pieces
  12. 1cup snow peas
  13. Steamed white rice, for serving
