  5. 4Cornish hens (about 1 1/2 pounds each)
  6. 3medium white mushrooms (3 ounces), sliced 1/4 inch thick
  7. 1medium onion, finely chopped
  8. 1celery rib, cut into 1/4-inch dice
  9. 1cup water
  10. Six 1/2-inch-thick slices of challah bread, crust removed
  11. 2tablespoons chopped flat-leaf parsley
