- 8 dried shiitake mushrooms
- 1 cup boiling water
- 1/2 egg white
- 2 teaspoons cornstarch
- 1/4 teaspoon salt
- 2 large skinless, boneless chicken breast halves--very thinly sliced crosswise and cut into short strips
- 4 ounces dried cellophane noodles or bean threads
- 2 tablespoons dry white wine
- 1/4 cup soy sauce
- 1 1/2 tablespoons Chinese oyster sauce
- 1 tablespoon peanut oil
- 1 tablespoon sesame oil
- 1 large garlic clove, minced
- Pinch of sugar
- Four 1/4 -inch-thick slices of fresh ginger
- 2 large star anise pods, lightly crushed with a knife
- 4 Swiss chard leaves, stemmed and thinly sliced crosswise
- 2 scallions, thinly sliced
- Freshly ground white pepper
- Chili oil, for serving
