Andean Chicken and Potato Cake

Ingredients

  1. 1 1/2 pounds whole chicken breast on the bone
  2. 1 1/2 pounds Yukon Gold potatoes, peeled and cut into 2-inch chunks
  3. Salt
  4. 1 small yellow bell pepper, quartered
  5. 1 large jalapeño, seeded and halved lengthwise
  6. 2 teaspoons fresh lime juice
  7. 1/4 cup extra-virgin olive oil
  8. Freshly ground pepper
  9. 1/2 cup plus 2 tablespoons mayonnaise
  10. 1 large celery rib, finely chopped
  11. 1/2 small red onion, finely chopped
  12. 1 Hass avocadohalved lengthwise, pitted and sliced lengthwise 1/8 inch thick
  13. 6 pitted Calamata olives, sliced crosswise 1/8 inch thick
  14. 3 1/2 ounces farmer's cheese (1/2 cup), crumbled
  15. 1 cup alfalfa, radish or broccoli sprouts
