Ingredients

  1. 3 tablespoons extra-virgin olive oil
  2. 6 thin slices of pancetta (3 ounces)
  3. 1 small leek, halved lengthwise and cut crosswise into 1/2-inch pieces
  4. 1 cup baby spinach
  5. 8 large eggs, beaten
  6. Salt and freshly ground pepper
  7. 3 ounces fresh goat cheese, crumbled (1/2 cup)
