  2. 1/3 cup mayonnaise
  3. 2 teaspoons horseradish, drained
  4. 8 slices rye bread or pumpernickel
  5. 4 large radishes, thinly sliced (1/3 cup)
  6. 1/4 cup small sprouts, such as radish or alfalfa
  7. 2 scallions, white and tender green parts only, thinly sliced
  8. 1/2 pound sliced smoked salmon
  9. Salt and freshly ground pepper
