Ingredients

  1. 1 pound sweet potatoes, scrubbed
  2. 2 1/2 cups all-purpose flour, plus more for rolling
  3. 3 tablespoons light brown sugar
  4. 1 tablespoon baking powder
  5. 1 teaspoon salt
  6. 1/4 teaspoon cayenne pepper
  7. 1 stick cold unsalted butter, diced
  8. 1/3 cup whole milk
  9. 1 egg yolk mixed with 1 tablespoon heavy cream
  10. 30 small sturdy herb sprigs, such as sage, thyme and rosemary
