Warm Seafood and Spinach Salad

Ingredients

  1. 1/4 cup dry white wine
  2. 1/4 cup water
  3. 12 littleneck clams, scrubbed
  4. 1 tablespoon extra-virgin olive oil, plus more for drizzling
  5. 5 ounces spinach, large stems discarded
  6. 1 slice center-cut bacon, chopped
  7. 1 tablespoon minced shallot
  8. 1 medium garlic clove, finely chopped
  9. 1 tablespoon minced roasted red pepper (from a jar)
  10. 1 tablespoon of toasted nori powder (see Note)
  11. Pinch of cayenne
  12. 1 pound cleaned squid bodies, sliced lengthwise 1/2 inch thick
  13. Salt and freshly ground black pepper
  14. 1/2 teaspoon finely grated lemon zest
