Ingredients
MOUSSE
- 1 pound turkey or chicken livers, trimmed
- 1 cup milk
- 2 tablespoons extra-virgin olive oil
- 1/2 sweet red apple, cored and chopped
- 1 large shallot, chopped
- 1 garlic clove, chopped
- 1 sage leaf
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon freshly ground pepper
- 2 teaspoons kosher salt
- 1 tablespoon bourbon
- 1/3 cup heavy cream
- 1 baguette, sliced 1/3 inch thick on the diagonal
PICKLED SHALLOTS
- 1/2 cup sugar
- 1/2 cup cider vinegar
- 4 large shallots (1/2 pound), thinly sliced
- 1 teaspoon kosher salt
- 1/4 teaspoon freshly ground pepper
- 1 thyme sprig
