Ingredients

MOUSSE

  1. 1 pound turkey or chicken livers, trimmed
  2. 1 cup milk
  3. 2 tablespoons extra-virgin olive oil
  4. 1/2 sweet red apple, cored and chopped
  5. 1 large shallot, chopped
  6. 1 garlic clove, chopped
  7. 1 sage leaf
  8. 1/4 teaspoon ground cinnamon
  9. 1/4 teaspoon freshly ground pepper
  10. 2 teaspoons kosher salt
  11. 1 tablespoon bourbon
  12. 1/3 cup heavy cream
  13. 1 baguette, sliced 1/3 inch thick on the diagonal

PICKLED SHALLOTS

  1. 1/2 cup sugar
  2. 1/2 cup cider vinegar
  3. 4 large shallots (1/2 pound), thinly sliced
  4. 1 teaspoon kosher salt
  5. 1/4 teaspoon freshly ground pepper
  6. 1 thyme sprig
