Ingredients

  1. 2 tablespoons soy sauce
  2. 1 tablespoon mustard
  3. 1 teaspoon sugar
  4. One 1 1/4-pound center-cut skinless salmon fillet, cut crosswise into 6 portions
  5. 1 cup small hardwood chips, such as hickory or apple
  6. 4 woody herb stems and sprigs, such as rosemary, thyme or winter savory
  7. 1/4 cup mayonnaise
  8. 1 tablespoon fresh lime juice
  9. Salt and freshly ground pepper
  10. 6 radishes, thinly sliced
  11. 2 medium cucumbers—peeled, halved, seeded and thinly sliced
