- 1 pound baby spinach, rinsed
- 2 tablespoons sour cream
- 1 large egg, lightly beaten
- Salt and freshly ground pepper
- 3/4 cup diced eggplant (optional)
- 1/4 cup Calamata olives (2 ounces), halved and pitted
- 2 plum tomatoes--peeled, halved lengthwise, seeded and thinly sliced crosswise
- 1/3 cup crumbled feta cheese (about 2 ounces)
