Spinach and Olive Pizza

Ingredients

PASTRY

  1. 1 cup plus 2 tablespoons all-purpose flour
  2. 1/4 cup extra-virgin olive oil
  3. 1/4 cup warm water
  4. 3/4 teaspoon salt

FILLING

  1. 1/4 cup plus 1 tablespoon extra-virgin olive oil
  2. 1/4 cup finely chopped onion
  3. 2 tablespoons minced garlic
  4. 1 pound baby spinach, rinsed
  5. 2 tablespoons sour cream
  6. 1 large egg, lightly beaten
  7. Salt and freshly ground pepper
  8. 3/4 cup diced eggplant (optional)
  9. 1/4 cup Calamata olives (2 ounces), halved and pitted
  10. 2 plum tomatoes--peeled, halved lengthwise, seeded and thinly sliced crosswise
  11. 1/3 cup crumbled feta cheese (about 2 ounces)
