Salad Pizza with Baby Greens and Herbs

Ingredients

FLAT BREAD DOUGH

  1. 2 cups warm water
  2. 2 teaspoons active dry yeast
  3. Pinch of sugar
  4. 5 to 5 1/2 cups all-purpose flour
  5. 1 tablespoon kosher salt
  6. 1 cup pure olive oil, plus more for brushing
  7. 4 garlic cloves, smashed
  8. 2 rosemary sprigs
  9. Cornmeal (optional)
  10. Coarse sea salt

SALAD

  1. 3 tablespoons fresh lemon juice
  2. 1 1/2 tablespoons Dijon mustard
  3. 1 1/2 tablespoons red wine vinegar
  4. 1/4 cup plus 2 tablespoons extra-virgin olive oil
  5. Salt and freshly ground pepper
  6. 1 pound mixed baby greens
  7. 1 1/4 cups mixed herbs, such as basil, mint, chervil, flat-leaf parsley, dill and tarragon leaves
  8. 4 medium scallions, very thinly sliced
  9. 6 ounces mild goat cheese, crumbled
