Ingredients

  1. 2 pounds carrots, cut into 3-inch lengths
  2. 1/4 cup plus 2 tablespoons extra-virgin olive oil
  3. 1/4 cup red wine vinegar
  4. 3 garlic cloves, minced
  5. 1 tablespoon honey (optional)
  6. 1 1/4 teaspoons harissa or other chile paste
  7. 1 1/2 teaspoons ground cumin or caraway
  8. 1/2 teaspoon ground ginger
  9. Salt
  10. 1/4 pound feta cheese, crumbled (about 1 cup)
  11. 3 pitted black olives
