Ingredients

  1. 1 1/4pounds sea scallops, quartered
  2. 1/2cup fresh lime juice
  3. 1/2cup fresh lemon juice
  4. 1/4cup pineapple juice
  5. 1/4cup fresh orange juice
  6. 2tablespoons unsweetened coconut milk
  7. 1tablespoon soy sauce
  8. 1teaspoon Sriracha hot sauce
  9. Salt and freshly ground pepper
  10. 2tablespoons extra-virgin olive oil
  11. 2tablespoons rice vinegar
  12. 1teaspoon sugar
  13. 1red bell pepper, julienned
  14. 1medium cucumber—peeled, seeded and julienned
  15. 1medium carrot, julienned
  16. One 1 1/2-inch piece of fresh ginger, peeled and julienned
  17. 1blood orange
  18. 1cup lightly salted popcorn
