Espresso Blackberry Macarons

Ingredients

  • 3 ounces almond flour (2/3 cup) or blanched sliced almonds (3/4 cup) or slivered almonds (2/3 cup)
  • 1 1/2 cups confectioners sugar
  • 1 tablespoon instant-espresso powder
  • 1 teaspoon pure vanilla extract
  • 3 large egg whites, at room temperature 30 minutes
  • 1/4 teaspoon salt
  • 3 tablespoons granulated sugar

  • For filling:
    • About 1/2 cup blackberry jelly

    Equipment:
    • a food processor with a sharp blade or an electric coffee/spice grinder
    • a large pastry bag fitted with a 3/8-inch plain tip or a quart-size sealable bag with a corner snipped off
    • an offset spatula.
