Fried Anchovies with Salbixtada Sauce

Ingredients

  • 1/2 cup slivered almonds, toasted
  • 3 large garlic cloves, coarsely chopped
  • 2 plum tomatoes, quartered
  • 2 tablespoons red wine vinegar
  • 1 tablespoons red pepper flakes
  • 1 teaspoon salt
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil

  • For Anchovies
    • 1 cup all-purpose flour
    • 2 teaspoons salt
    • 1/2 teaspoon freshly ground black pepper
    • 4-5 cups vegetable oil
    • 1/4 pound fresh anchovies (about 8 fillets)

    For Sunny-side-up egg
    • 1 teaspoon unsalted butter
    • 1 large egg

    For Serving:
    • Juice of 1/2 lemon
