Broccoli and Parsnip Soup

Ingredients

  • 1 pound of broccoli
  • 6 cups water
  • 1 1/2 teaspoons salt, or to taste
  • 3 fresh parsley sprigs
  • 3 fresh thyme sprigs or 1/4 teaspoon dried thyme, crumbled
  • 1 Turkish or 1/2 California bay leaf
  • 1/2 pound parsnips, peeled, halved lengthwise, and cut into 1/2-inch-thick slices
  • 1 cup chopped onion (1 medium)
  • 1 cup low-sodium chicken broth
  • 1/4 teaspoon black pepper, or to taste
  • 1/8 teaspoon freshly grated nutmeg, or to taste
