- 1 red bell pepper

- 2 Kirby cucumbers, peeled, halved lengthwise, seeded, and cut crosswise into 1/4-inch-thick slices
- 1/2 cup loosely packed fresh basil leaves
- 1/2 cup loosely packed fresh mint leaves
- 1/2 cup loosely packed fresh flat-leaf parsley leaves
