- 2 pounds apples, preferably a mix of tart and sweet, peeled, cored, cut in chunks
- 2 to 3 tablespoons water
For the filling:
- 5 good-sized apples, peeled, cored and cut in eighths
- 1/4 to 1/3 cup light brown sugar
For the egg wash:
- 1 large egg
- 1 teaspoon water
