Cornish Hens with Caraway Cabbage

Ingredients

  • 1 tablespoon vegetable oil
  • 6 shallots, sliced
  • 2 plum tomatoes, seeded, chopped
  • 2 garlic cloves, sliced
  • 1/2 cup dry white wine
  • 2 large fresh thyme sprigs
  • 1 small bay leaf
  • 2 cups canned unsalted beef broth
  • 2 cups plus 1 tablespoon canned low-salt chicken broth
  • 2 teaspoons caraway seeds
  • 1 teaspoon cornstarch

  • For cabbage:
    • 2 teaspoons caraway seeds
    • 1 tablespoon butter
    • 1/4 head savoy cabbage, cored, sliced
    • 1/2 onion, thinly sliced
    • 1/2 cup canned low-salt chicken broth
    • 2 ounces thinly sliced prosciutto, cut into thin strips

    For hens:
    • 2 1 1/4- to 1 1/2-pound Cornish game hens, quartered
    • 1 tablespoon olive oil

    • 1 cup couscous, cooked according to package directions
