- 1 cup crumbled Dolce Gorgonzola, Gorgonzola, or other creamy, mild blue cheese
- 3/4 cup grated fontina
- 1/2 cup grated Pecorino Toscana, or Percorino Romano
- Salt and freshly ground black pepper
- Minced parsley, garnish
