  • 4 (10-ounce) whole trout, cleaned, leaving heads and tail intact
  • Salt
  • Freshly ground black pepper
  • Emeril's Original Essence
  • 8 thin slices fresh lemon
  • 8 sprigs fresh thyme
  • 12 bacon slices
  • TOMATO THYME BUTTER SAUCE:
  • 1/2 cup dry white wine
  • 2 tablespoons lemon juice
  • 2 tablespoons finely minced shallots
  • 1/4 cup heavy cream
  • 1 teaspoon minced fresh thyme or lemon thyme
  • 2 sticks cold unsalted butter, cut into pieces
  • 1/4 teaspoon hot sauce
  • 3/4 cup peeled, seeded and diced tomatoes
  • 3/4 teaspoon salt
  • 1/4 teaspoon freshly ground white pepper
