  • Salt and freshly ground black pepper
  • 2 large spring roll wrappers
  • Vegetable oil
  • Chipotle Dressing
  • Marinated Mango (better made one day in advance)
  • Sesame Cucumber Salad
  • Guacamole
  • FOR THE SHRIMP:
  • 1/2 pound rock shrimp
  • 1 teaspoon Essence
  • 2 cups water
  • 1 1-inch piece ginger, peeled and thinly sliced
  • 1/2 lemon, halved and juiced
  • 2 tablespoons soy sauce
  • 2 tablespoons sugar
  • 1 bay leaf
  • 1/2 tablespoon chopped green onions (green and white parts)
  • 1 teaspoon garlic
  • 1 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 1/2 teaspoon crushed red pepper flakes
