Ingredients

7 oz boneless pork loin
1 burdock root , 6 inch piece (or 1 parsnip)
2 oz daikon radishes
0.5 cup fresh shiitake mushrooms , about 4 mushrooms
4.5 oz firm tofu
1 tsp sesame oil
2.5 cup dashi stock , or the same amount of water and 2 teaspoons dashi-no-moto
4.5 tbsp miso
2 scallions , chopped
1 tsp sesame seeds , optional
