Ingredients

  • 3 teaspoons Smoked Paprika
  • 12 teaspoon Ground Allspice
  • 1 12 teaspoons Whole Coriander Seeds, ground
  • 3 Whole Cardamom (Cardamon), ground and husks removed
  • 3 Ground Cloves
  • 1 teaspoon Sea Salt
  • 3 Garlic Cloves, finely chopped
  • 1 Chilli, seeds removed and finely chopped
  • 10 grams Fresh Ginger, finely chopped
  • 2 tablespoons Olive Oil
  • 1 kilogram Boned Goat Shoulder, cut into 4 by 4cm pieces
  • 1 Goat Shank, cut into 3 pieces
  • 400 grams Potatoes, med sized kipfler, cut into halves
  • 2 medium Parsnip, cut into 3 or 4
  • 2 medium Carrots, cut in half
  • 10 Pickling Onions, peeled
  • 5 Roma Tomato, chopped into quarters
  • Orange and Lemon Rind
  • 2 Fresh Bay Leaves
  • 1 Cassia Bark
  • 600 milliliters Chicken Stock
  • 2 cans Canned Chickpeas, washed and drained
  • Fresh Coriander, chopped
  • Fresh Fennel, grated
  • Lemon Zest
