Smokin' Pecan Mac 'n' Cheese

Ingredients

  • 1 cup Pecans
  • 12 ounces Elbow Macaroni Pasta
  • 5 ounces Smoked Bacon
  • 3 tablespoons Olive Oil
  • 3 tablespoons Shallot, minced. Yellow or white onion is fine.
  • 1 12 tablespoons Garlic, minced
  • 3 tablespoons All-Purpose Flour
  • 2 12 cups Heavy Whipping Cream
  • 14 cup Fresh Chives, chopped (optional)
  • 12 teaspoon Fresh Thyme, can use dry herb thyme
  • 12 teaspoon White Pepper
  • 12 teaspoon Salt
  • 12 Paprika
  • 2 12 cups Sharp White Cheddar, shredded
  • 2 cups Gouda, shredded
  • 1 12 cups Smoked Cheddar, yellow
