- 1 cup Pecans
- 12 ounces Elbow Macaroni Pasta
- 5 ounces Smoked Bacon
- 3 tablespoons Olive Oil
- 3 tablespoons Shallot, minced. Yellow or white onion is fine.
- 1 1⁄2 tablespoons Garlic, minced
- 3 tablespoons All-Purpose Flour
- 2 1⁄2 cups Heavy Whipping Cream
- 1⁄4 cup Fresh Chives, chopped (optional)
- 1⁄2 teaspoon Fresh Thyme, can use dry herb thyme
- 1⁄2 teaspoon White Pepper
- 1⁄2 teaspoon Salt
- 1⁄2 Paprika
- 2 1⁄2 cups Sharp White Cheddar, shredded
- 2 cups Gouda, shredded
- 1 1⁄2 cups Smoked Cheddar, yellow
