Ingredients
- 1 cup Couscous, Cook per instructions.
- 4 Bell Peppers, Any color. Tops cut off. Remove the inside and scrape off the ribbing with a spoon.
- 1⁄3 cup Carrots, Chopped finely
- 1⁄3 cup Squash, Chopped finely
- 1⁄3 cup White Onion, Chopped finely
- 1⁄2 cup Cherry Tomato, Cut in half
- 1 tablespoon Mint, Fresh mint chopped finely
- 3 cloves Garlic
- 1⁄3 cup Feta Cheese
- Salt
- Pepper
- 1 tablespoon Extra Virgin Olive Oil
Description
Peppers Stuffed With Ground Beef And Rice And Topped With A Seasoned Tomato Sauce And Cheese. Peppers Can Be Any Color But I Usually Use Green. This One Is From My Hungarian Grandma With Some Added Spice From Me.
