Ingredients

  • 1 cup Quinoa or Brown Rice
  • 2 tablespoons EVOO
  • 1 Red Bell Pepper, deseeded & sliced into thin strips
  • 1 Yellow Bell Pepper, deseeded & sliced into thin strips
  • 1 Red Onion, thinly sliced into 1/2 moons
  • 1 Zucchini, thinly sliced
  • 2 teaspoons Ground Cumin
  • 1 tablespoon Chili Powder
  • 12 teaspoon Sea Salt
  • 1 Fire Roasted Diced Tomatoes, 15oz can
  • 1 Black Beans, 15oz can
  • Ground Pepper, to taste
  • 1 package Tortillas, gluten free brown rice tortillas (food for life brand), or sprouted grain tortillas (ezekial brand)
  • 1 Avocado, for garnish
