  • 1 pound Italian Sausage, chicken or pork, with casings removed
  • 34 cup Onion, chopped
  • 2 tablespoons Fresh Sage, chopped
  • 3 cloves Garlic, minced
  • 1 14 cups Dry White Wine, such as pinot grigio
  • 1 can Canned Pumpkin Puree, 15 oz
  • 1 12 cups Low Sodium Chicken Stock
  • pinch Ground Saffron, optional
  • 12 teaspoon Salt
  • Freshly Ground Black Pepper
  • 1 pound Pasta, such as rigatoni or papparadelle
  • Grated Parmesan Cheese, freshly grated (preferably parmigiano-reggiano)
