Antipasti Platter

Ingredients

  • Prosciutto, (Italian cured ham); other good options are sopressata (sweet, hot, or both) and Genoa salami
  • wedge Provolone, or other Italian cheeses, You determine the quanties. Make the platter as small or large as you wish. For a small dinner, I suggest 1 meat, 1 cheese and 2 vegetables with crackers or thin slices of Italian bread.
  • Goat Cheese, log rolled in fresh, chopped parsley or minced walnuts
  • Italian Olives, mixed
  • Marinated Artichoke Hearts
  • Cherry Tomato, tossed in olive oil and fresh basil
  • Capers
  • Baby Spinach, leaves, tossed lightly in 1/2 tsp. of olive oil, balsamic or rice vinegar and kosher salt
